Shellfish Walk the beaches of Campeche, Yucatán and Quintana Roo and you’ll see plenty of sea shells by the seashore. Conch, of course, is the largest (sometimes as big as two feet) and one of the most beautiful. Caracol, as conch is known in Spanish, also provides a delicious meat that Maya people have eaten for hundreds of years. The meat is extracted by drilling a small hole in the shell top and forcing the muscle out. It’s commonly served in ceviche, a dish that uses lime juice to “cook” the meat.
Traditional rivals, Campeche and Mérida fought for power while the entire peninsula ignored the rest of Mexico, which was embroiled in a series of continuing revolutions. Unhappy with centralism and liberal land reforms, the powerful families in the Yucatán declared the region’s independence from Mexico in 1838. Facing economic realities, it came back into the fold in 1843, but that made no difference to the Indian community, which was still under the yoke of Hispanic oppression. In early 1847 the Yucatán seceded again after secessionists armed the Maya to serve as soldiers against the Mexican garrisons.
In a last-ditch effort to unseat the Spanish, the Cocom-led Maya attacked Mérida on the night of November 8th, 1546, the date of “Death and the End” in the traditional Maya calendar. The warriors slaughtered not only Spaniards and Indians who had accepted Christianity, but, in a complete rejection of the foreign culture, they also killed horses, cattle, anything that the invaders had brought with them – even fruit trees. In the end, however, they failed to completely dislodge the Spanish conquistadors from the city.
